Trini tradition

Nigel and I waited until the kids were in bed tonight before embarking on the fairly lengthy process of making pastelles- a Trinidadian dish traditionally made at Christmas time. Nigel has a craving for this dish each holiday season and it has been a few years since we made them. Each pastelle is made with rolled out cornmeal mix, filled with a delightful meat mixture, folded in a banana leaf and is steamed altogether before enjoying! Yum!
